Quick + Easy Banana Muffins

If you know me, you know this is one of my favorite recipes (in my top 10 for sure!). To stay on track with my nutrition, I like to make sure I am incorporating foods I love and enjoy. Part of that is making healthy sweet treats that satisfy cravings and get me through the day.


Having prepped snacks on hand helps prevent you from over-indulging, reduces stress associated around cravings, and saves you time in your day. A major plus of this recipe is that all you have to do is throw your ingredients in a blender & stir in your chocolate chips, then you’re all good to go! Low effort recipe with high nutritional value and packed with deliciousness…what more could you ask for?


Blender Banana Muffins
 -2 cups Oatmeal
-2 Bananas (200g)***
-2 Eggs
-1 c Plain Nonfat Greek Yogurt
-3 T Maple Syrup
-Vanilla and Cinnamon to taste -1 1/2 tsp baking powder
-1/2 tsp baking soda
-1/8 tsp salt -1/2 c mix ins- fruit, chocolate chips, nuts etc. I used half walnuts and half chocolate chips! If you choose other mix ins, it will impact the macros listed below. 
Blend all ingredients except mix ins in a blender. Once thoroughly blended (May take a few mins) stir in chocolate/nuts. Pour into 12 muffins and bake at 400 for 15 mins! 

***If you aren’t a banana lover, feel free to try this recipe with canned pure pumpkin. Substitute the banana for 3/4 c pure pumpkin!
